Meg Cooks. Or, she doesn't.

I have a good excuse for barely cooking these last couple weeks--have I cooked anything? I'm not sure. I also have a good excuse for that, right?
New baby or not, sometimes I get into ruts with cooking. Especially in winter. So I'm wondering: what do you make for dinner when you don't feel like cooking and eating out isn't an option?

Have you found any gluten-free pasta you like? Pasta is so fast and easy and virtually a blank slate.

I will admit there have been nights when we have gotten by with tuna sandwiches and sliced (sometimes canned!) fruit. Or quesadillas and canned soup.
I swear I love to cook and I do cook more often than not! Are there gluten free tortillas out there? Fajitas are pretty fast, easy, delicious...
Sorry to not be much help with g-f stuff. Not my area of expertise, evidently. :)

no worries--any suggestions are great--and i really was just curious what other people do.
for what it's worth, we like tinkyada pasta--it's brown rice and doesn't get mushy when cooked. and corn tortillas are a great staple for the gluten-free kitchen.

I have recently discovered quinoa, and I love it! It is a gluten-free grain, very nutritious, and extremely versatile. For breakfast it is good with milk and strawberries. You can also make an awesome salad out of it-- I made a black bean and corn salsa(black beans, frozen corn, chopped tomato, onion, cilantro, and jalepeno) and mixed it in with some lime juice, salt, and pepper. You can pretty much mix it with anything, and its really easy to prepare.

Also, I know some really good soup recipes that are gluten-free. My favorite is butternut squash. However, I don't really measure anything though, so let me know if you want it :)

Pasta, grilled cheese, and tossed salad. Those are my go to staples for when I am pressed for time or energy. And when we are really desperate? Cold cereal.

i love cold cereal--i seem to need extra calories now, even more than when i was pregnant, and cold cereal is my new best friend.
